My podcast producer, Billy P, asked me this question. “I love corn
tortillas with my Mexican food and heard something over the weekend about
blue corn tortillas being good for you. What’s the story?”
Corn comes in a variety of colors beyond the yellow and white that we’re
familiar with such as blue, black and violet. A study reported in the
Journal of Science in Food and Agriculture found that blue tortillas and
other dark varieties have greater quantities of a naturally occurring
pigment called anthocyanins. You may have heard this term before. Anthocyanins
are also found in purple grapes and wine and are a natural antioxidant.
Blue corn tortillas contain more protein and less carbs than the white
corn version which may be a good thing for diabetics.
Have you heard the news about dairy and the hormone rBST? Many people
stopped drinking milk or changed the type that they buy due to concern
over the use of the artificially produced hormone called rBST. Even though
there has yet to be a lab test that can differentiate between milk produced
by cows given rBST versus those that have not, consumers have spoken loudly
and the industry has listened. In Florida, the state-based dairy cooperative
that includes the majority of dairy farmers has made the decision to no
longer use the drug. This decision affects most milk in Florida as well
as some in Tennessee, Alabama, Virginia and the Carolinas. The same co-op
decision has already been made in California, the nation’s number
one dairy production state so this is a national trend.
